Head Chef Francesco Torcasio and Group Executive Chef Giuseppe Pezzella lead chic Nonna’s remarkable culinary team. Born in Calabria and renowned for his passion for time-honoured recipes, Chef Francesco made his mark on the world of Italian gastronomy as the former Chef at Il Borro restaurants in both Dubai and London. His love for gastronomy began at the young age of fifteen when he worked his way up the ranks to become one of the most admired chefs in the region. As for Chef Giuseppe Pezzella, his culinary talents have earned him worldwide acclaim and a collection of prestigious awards. Chef Pezzella’s culinary journey also began at a young age, honing his skills in the kitchen of his family’s restaurant in Naples, Italy. He then decided to take on bigger challenges and moved to France, UK and finally landed in the UAE, where he gained fame for his ability to blend classic Italian techniques with modern culinary trends.

With a philosophy firmly rooted in the use of seasonal ingredients and meticulously sourced premium products, the culinary team has carefully curated a brand-new menu.

The new menu offers a wide range of options, from classic pasta dishes like hand-cut Fettuccina pasta with bolognese sauce, to innovative creations like Carpaccio di Fassona with parmigiano reggiano, wild arugula coulis, artichoke dressing, and seasonal truffle. Steeped in tradition and bursting with flavour, guests can expect their palettes to be transported to Florence, starting with mouth-watering appetisers such as Tartare di Tonno, Vitello Tonnato, and Fiori di Zucchine. Drawing inspiration from classic recipes, Chic Nonna unveils a wide range of hearty mains ranging from Pizzettes, Pastas, Risottos to meat and seafood options.

Guests can pair their meal with an extensive wine selection from the largest wine cellar in the region. To sweeten guests’ tastebuds, a wide range of expertly concocted cocktails are prepared to transport guests across the beautiful cities of Italy, each focusing on the popular essences of the specific area. Paying homage to the romantic city of Venice, diners can revel in the flavours of Laguna Spritz, an aromatic mix of Mancino sakura, rhubarb, grapefruit cordial, and sparkling.
