The iconic hospitality group has revealed a unique line-up of summer-inspired cocktails across its landmark properties in the UAE.

IHG Hotels & Resorts has unveiled a curated selection of summer-inspired drinks, exclusively available at a handful of hotels throughout the UAE. Paying homage to the unique location, design, and atmosphere of each hotel, every cocktail is thoughtfully crafted to represent a distinct and vibrant IHG property.

Blending fruity and fresh flavours, the hotel group’s creative cocktails offer new twists on classic drinks for an enhanced and elegant sipping experience. The limited-time summer line-up will be available for guests to enjoy throughout the season and can be made DIY-style with the recipes below. Cheers!

Clover Club

Exclusively available at Hive Lounge, Crowne Plaza Dubai Marina

Named after a world-renowned cocktail bar in Brooklyn, New York – owned by famous American mixologist, Julie Reiner – this drink blends bold flavours for an acquired sipping experience. Tart meets sweet and is rounded off with a foamy head to ensure a striking collision of textures and tastes.

• 60ml Tanqueray Gin
• 30ml lemon juice
• 15ml grenadine syrup
• 25ml egg white
• Add ingredients into a shaker and shake well
• Strain into a chilled martini glass
• Garnish with rosemary

Jungle Bird

Exclusively available at Hive Lounge, Crowne Plaza Dubai Marina

Dating back to the 1970s, the Jungle Bird was an iconic welcome drink offered to guests of the former Kuala Lampur Hilton. It was crafted by Jeffrey Ong inside the hotel’s Aviary Bar and is said to have been served inside porcelain bird-shaped containers.

• 45ml Captain Morgan Dark Rum
• 15ml Campari
• 15ml lemon juice
• 45ml pineapple juice
• 15ml homemade sugar syrup
• Add all the ingredients into a shaker and shake well
• Strain into a chilled white wine glass
• Garnish with a dried lime

White Lady
Exclusively available at Hive Lounge, Crowne Plaza Dubai Marina

The original recipe for the White Lady is believed to have been created by Harry MacElhone in 1919 at Ciro’s Club in London. An elegant, sweet-and-sour drink, it’s a perfectly balanced cocktail with a clean finish and striking colour.

• 30ml lemon juice
• 30ml homemade sugar syrup
• 25ml egg white

• Strain into a chilled martini glass

Rosemary & Grapefruit Wine Spritz
Exclusively available at Vista Restaurant & Terrace, InterContinental Dubai Festival City

With an herbaceous, woody undertone, slight bitterness, and hints of citrus, this cocktail is reminiscent of a summer afternoon spent on a terrace under the pine trees of Southern France or Italy. It’s a fresh take on the traditional Spritz, staying true to the Mediterranean heritage of the popular aperitif with the option to customise using fruity and sweet flavours.

• 30ml of chilled dry, white wine (Chardonnay recommended)
• 15ml chilled dry vermouth (Noilly Prat recommended)
• 60ml soda
• Garnish with a rosemary sprig and grapefruit slice

The Garden
Exclusively available at InterContinental Dubai Marina

Drawing inspiration from the buzzing vibrancy of a garden, this juniper-and-coriander-enhanced gin possesses deep and sweet floral characteristics. Complete with homemade cucumber syrup, muddled juniper berries, and freshly squeezed lemon juice, it’s a simple summer concoction that brings the original aromas of Hendrick’s Flora Adora to life.

• 45ml Hendricks Flora Adora
• 20ml sugar syrup
• 2ml Juniper berries
• 15ml cucumber syrup
• 20ml fresh lemon juice
• Shake everything together and strain over an ice cube
• Garnish with an orange peel and cucumber

The Elevation
Exclusively available at voco Dubai

Inspired by the famous ‘Aviation’ cocktail, The Elevation is a stunning take on a traditional drink. Perfectly aesthetic with its lilac colouring, the floral-flavoured sip is also the most popular recipe featuring Crème de Violette. The drink pairs perfectly with voco Dubai’s bar and lounge setting, Windows, which offers unparalleled aerial views over Dubai’s cityscape.

• 40ml London Dry Gin
• 10ml Crème de Violette
• 10ml Luxardo Maraschino Liqueur
• 15ml lavender cordial
• 25ml freshly squeezed lemon juice
• Shake well with an ice cube and double strain into a chilled cocktail glass
• Garnish with lemon or orange zest

Deep Purple
Exclusively available at NoHo Bar & Grill, InterContinental Ras Al Khaimah

This recipe introduces warmer flavours reminiscent of the tropics, blending the purity of the berries with the citrus taste of fresh lime and the intensity of the Pisco. Noho Bar & Grill’s tonka bean-infused pisco brandy is a popular choice, complete with homemade blackberry shrub and fresh blackberries.

• 60ml Pisco
• 30ml lime juice
• 30ml egg whites
• 3 blackberries
• In a shaker, muddle the blackberries with lime juice
• Shake together with the Pisco, egg whites, and ice
• Strain and serve in a coupe cocktail glass
• Garnish with dried rose buds

Cantaloupe Sip

This cocktail blends the smoothness of vodka with the lusciousness of Midori and the tropical allure of pineapple – perfectly rounded with light floral notes. It’s an ideal choice for those seeking a refreshing and visually appealing drink that perfectly captures the essence of summer.

• 45ml vodka
• 30ml Midori
• 60ml fresh pineapple juice
• 15ml elderflower syrup
• Shake everything together with ice and strain
• Dry shake the mixture again to create a thick froth and pour into a chilled coupe glass
• Garnish with a wheel of dehydrated pineapple
