As the month unfolds, Emirates Golf Club invites you to an extraordinary Iftar experience, featuring a special collaboration between acclaimed Chef Zahra Abdalla and the club’s Executive Chef Dayan Anthony. Together, they have crafted a menu that honours Arabic and Iranian culinary traditions, reimagined through a contemporary lens with playful flavours, modern techniques, and a strong commitment to sustainability and zero-waste cooking.

Chef Zahra’s personal stories are woven throughout the menu. To name a few, the Afghani Mantu draws inspiration from a cherished teenage memory of making dumplings with her bestfriend’s grandmother, now presented as delicately steamed bites filled with gently spiced flavours served on a best of yoghurt and topped with a rich split pea and tomato-based sauce. The Saffron Chicken and Freekah is a marriage of flavours inspired by her mother’s Persian Kitchen and her mother-in-law’s Palestinian Kitchen. The Beetroot Bil Zeit, a zero-waste vegan dish, thoughtfully uses both beetroot and its leaves, celebrating mindful cooking.
For Chef Zahra, the collaboration is a celebration of culture and joy. “Food has always been an important part of my life,” she says. “Certain scents, flavours, and recipes carry comforting memories, and I love creating dishes that bring people together, especially during Ramadan.”

As the sun sets over Dubai’s rolling greens, the Royal Majlis transforms into a serene sanctuary for reflection and connection. Lanterns cast a soft glow, while the gentle notes of the oud fill the air, setting the perfect backdrop for an evening defined by the aroma of spices and fresh, locally sourced ingredients.
A Menu of Heritage and Creativity
The Iftar journey opens with a thoughtfully curated selection of salads and mezze, each created with intention and respect for the ingredient. Responsibly sourced vegetables take centre stage in dishes such as the Roasted Cauliflower Salad alongside the Roasted Pumpkin, Kale & Freekeh Salad, offering a comforting yet fresh balance of flavours and textures.

Traditional favourites are reimagined with a lighter, contemporary touch. The Hummus Trio, made using locally sourced ingredients, pairs a classic version with beetroot and parsnip variations, while the Purslane, Zaatar & Tomato Salad and Fattoush add brightness and crunch to the spread.
Vegetarian classics shine in Fattat Beitinjan and the Whipped Feta with Date Molasses Caramelised Carrots, finished with a pistachio pesto made from carrot tops. The experience culminates with Kabab Torsh Shortribs, slow-braised for six hours and served with silky celeriac purée, before ending on a nostalgic note with Choux Pastry with Saffron & Pistachio Ice-cream.
