A Nikkei interpretation of Peru’s most beloved dish, celebrating land, sea, and rainforest

In honour of Ceviche Day on June 28th, CLAY Dubai is bringing a bold and beautiful tribute to Peru’s national dish with a special limited-edition ceviche menu from June 27th to July 6th. Known for its award-winning take on Nikkei cuisine, CLAY invites guests to experience three unique ceviche creations, each inspired by a different region of Peru: the Coast, the Andes, and the Amazon.

True to CLAY’s signature Nikkei style, the menu blends Japanese precision with Peruvian soul, inviting guests on a flavour-led journey through layered landscapes and culinary traditions.

The journey begins at the coast with De Esquina, a coastal ceviche that captures the essence of the sea. Delicate slices of tuna and octopus are layered with plump scallops, then dressed in a blend of La-Yu chili oil and ají amarillo-infused oil. This dish is finished with a touch of tiger’s milk and sweet potato for a nod to tradition, while crispy fish nori crackers add an unexpected crunch and umami depth.

Next comes Ají & Corn, a dish inspired by the highlands of the Andes. Sea bream is the star here, elevated with rocoto ají emulsion and an Andean corn trio that delivers layers of texture and earthy sweetness. Crispy chulpi corn crackers bring a satisfying bite, while the addition of cushuro, a naturally occurring Andean caviar, adds a rare and delicate twist. Pickled onions and a drizzle of black ají oil bring it all into balance.

Finally, the menu ventures deep into the rainforest with Jungle Citrus, an Amazonian-inspired ceviche that is as vibrant as it is refreshing. Lush slices of salmon are bathed in a passionfruit and yuzu sauce, balanced with ripe mango and a dusting of green banana powder. Accents of lime gel, mint oil, and kaffir lime leaves evoke the verdant intensity of the jungle, creating a dish that is both exotic and uplifting.
