Chef Glen Ballis’ latest flame-infused dining concept unveils a new culinary addition of indulgent light bites and eclectic cocktails, served daily from 6.30pm to 10.30pm

Renowned for its fiery personality and fresh, seasonally inspired dishes, INA is now serving its signature experience in a new bite-sized snack and bar menu. Bringing even more flavour to the table, diners can expect an inventive lineup of small bites that are big on flavour, paired with cocktails designed to spark conversations and ignite the senses. Perfect for refined casual dining or a light summer meal, this new menu turns up the heat in all the right ways.

INA is a bold, design-led concept from Fundamental Hospitality in collaboration with renowned Chef Glen Ballis. Rooted in the philosophy that ‘fire never fails’, the restaurant celebrates the primal power of flame through sophisticated, instinctive dishes. Featuring a captivating open-flame kitchen and earthy interiors, INA exudes rustic charm and a magnetic atmosphere that is both inviting and refreshingly spontaneous. As the ultimate year-round dining destination, the space also benefits from a unique open-air canopy roof that adapts to the elements, offering a cool, climate-controlled environment.

Each plate on the specially curated snack and bar menu is an intentional yet delicate balance of flavour, showcasing the beauty in simplicity and the power of premium, seasonal ingredients. Explore delightful combinations such as the marinated olives with semidried tomato and Sicilian lemon, or the sweet-savoury harmony of grilled medjool dates layered with wagyu ham and manouri cheese. Other standout creations include the tomato and anchovy atop pan de cristal, and the indulgent Westholme beef tartare served with crispy potato gratin and dill mayo.

Guests will also find whispers of INA’s flame-forward philosophy in the caviar with fire-toasted brioche, the smoky grilled violet artichokes topped with tomato and pecorino, and the charred padron peppers finished with smoked salt.

To accompany the new dishes, choose from an array of eclectic sips, including a newly launched cocktail menu inspired by the divine Orishas of ancient Yoruba mythology. Each creation blends bold flavours with symbolic storytelling, each representing a different diety.

The highlights include INA Embers, a fiery, spicy blend that captures the essence of the venue; the OYA Spritz, smooth and indulgent with notes of banana and caramel; and the SHANGO Punch, a tropical, luxurious concoction of grilled pineapple, coconut, and Rémy Martin VSOP.

For lighter, refreshing options, the AJE Cooler offers a bright, tart twist, while the OBATALA Mojito serves purity in every herbal sip. With many available as alcohol-free variations, this cocktail collection allows guests to sip with intention and ignite their evening, guided by myth, fire, and flavour.
