DIFC welcomes a compelling new dining destination with the opening of Uncutby Citadel Hospitality at Al Fattan Currency House. More than a restaurant, Uncut introduces a third-culture concept where heritage meets imagination, technique meets intuition, and handcrafted dishes tell stories shaped by memory, travel, and transformation. Conceived as a space for exploration rather than labels, Uncut reinterprets familiar flavours into soulful, surprising expressions that feel both intimate and global.

The menu is generous and designed for discovery, moving seamlessly from refined small plates and artisanal pastas to expressive mains, comforting sides, and indulgent finales. Culinary influences cross continents, weaving European precision, Middle Eastern warmth, Asian aromatics, and global comfort favourites into layered compositions. Sharing lies at the heart of the experience, supported by seasonal produce and a philosophy that prioritises craftsmanship and depth of flavour.
Among the standout creations, freshly baked bread arrives with an abundant collection of over ten house-made compound butters, each offering a distinct character. Rich lamb ribs, revisited pâté en croûte, and indulgent escargots evoke timeless technique through a contemporary, cross-cultural lens.


The journey continues with boundary-blurring mains, from the bold cabbage Bolognese to the refined champagne lobster, alongside slow-cooked lamb pasta infused with spice and memory, and black cod glazed with lemongrass and tamarind for a vibrant, aromatic finish.
Desserts embrace indulgence with confidence. Guests can share a decadent chocolate and black truffle cake or savour a pistachio cheesecake that balances nuttiness, texture, and elegance. Every sweet finale reflects the same handmade philosophy that defines the kitchen’s approach.
The beverage programme is equally adventurous, curated as a global voyage in a glass. From premium spirits and rare whiskies to craft gin, aged rum, sake, mezcal, and top-tier tequilas, the selection caters to both curious explorers and seasoned connoisseurs.


The wine list spans France, Italy, Spain, and beyond, complemented by iconic Champagne labels, delicate rosés, and dessert wines for a softer close.
Adding energy to DIFC’s workday rhythm, Uncut introduces a weekday Business Lunch priced at AED 95 for a starter and main, or AED 125 for a three-course experience, inclusive of taxes.

As evening approaches, “Traffic Hour” transforms the city’s busiest moment into a ritual, offering a daily happy hour from 4:30pm to 7:00pm, where guests order a drink for an affordable price and enjoy complimentary bites — an invitation to linger rather than rush.
